Cinnamon Almond Butter One Pot Curry


Serves 5-6

  

 Ingredients:

4 oz NUTTY NOVELTIES CINNAMON ALMOND NUT BUTTER

1.5 - 2lb boneless, skinless chicken thighs- cubed

2 green plantains, cubed

1 red pepper, diced

1 white onion, diced

1 jalapeno, diced

1 28oz can of diced tomatoes

1 cup vegetable broth

1 can coconut milk

2 TBSP garlic

2 TBSP freshly ground ginger

3 TBSP garam masala spice mix

3 bags of Uncle Ben’s Instant basmati rice

 

For Serving: 

Fresh cilantro or thai basil

 

 

Directions: 

  1. Warm a large pot over medium heat. Once hot, add olive oil and chicken cubes to brown the meat. 
  2. Once the chicken is brown, move the chicken to one side of the pot. Add garlic, ginger, garam 

masala spices and onion - allow to simmer for a few minutes.

  1. Add red pepper, plantains and can of tomatoes and stir. 
  2. Add Nutty Novelties Cinnamon Almond butter and break apart in pot to combine. 
  3. Add vegetable broth and stir- allow to simmer on low - medium heat for 10-15 minutes until plantains

and peppers are soft.  

  1. Pour full can of coconut milk into the pot and stir. 
  2. Make the instant rice based on package directions and scoop into bowls. Ladle curry on top of rice and top with cilantro or thai  basil.
